Evan and Lauren have owned and managed Trinity Cider since its opening in 2018, but have dreamed about it and planned for it for much longer.
Evan grew up making hard apple cider in Washington State with his father. They would pick apples from their yard, grind and press them and ferment them for as long as 2 years to make tasty, un-sweet hard apple cider. When Evan got to Dallas in 2015, he realized two things :
1. There wasn’t much great hard cider being made in Texas
2. Lauren was the most wonderful girl he’d ever met
Since Lauren seemed to like Evan too, they started planning out a hard cider company in Deep Ellum where they live and on October 12th, 2018, they opened the doors to Trinity Cider and later that night got engaged!
They are now married, live with their dog Alfie, and you can often find all three of them at the cidery with smiles on their faces!
After brewing beer for years, Chris Rigoulot agreed to join the Trinity Cider team to help explore the possibilities of unique, craft cider.
He dreams up cider creations and then brings them to life using some tried-and-true traditional cider-making methods and some cutting-edge, revolutionary techniques.
Chris lives in Dallas with his wife and son and is always accepting new ideas for his next cider!
